It's not just about nori, familiar to us from sushi, but also lesser-known ingredients like antioxidant-rich spirulina, which adds health benefits and flavor to a variety of dishes.

Seaweed represents a diverse group of marine plants, including varieties like sea lettuce, red algae, and unique types such as codium. The global trend toward ocean-friendly and sustainable food has boosted the use of seaweed due to its environmental benefits. Even fine dining establishments, such as Central in Peru—named the best restaurant in the world in 2023- are embracing the trend, incorporating seaweed into their biodiverse menus with dishes featuring sea grapes, sea lettuce, and codium.
